Ingredients:
4 chicken breasts
1 cup fresh peaches, mashed
1/2 cup balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/2 teaspoon garlic, crushed
1 tablespoon fresh thyme
1/2 cup olive oil
Directions:
Combine vinegar, mustard, honey, salt, pepper, garlic, and thyme. Whisk until well blended, then add olive oil and mix.
Just before you are ready to marinate chicken, stir in peaches.
Pour over chicken breasts. Allow to marinate for at least 2 hours and grill.
