Ingredients:
1 3/4 cups couscous
1/4 cup orange juice concentrate
2 tablespoons lemon juice
2 tablespoons olive oil
1/2 teaspoon cinnamon
salt
2 1/2 cups boiling water
1/2 cup chopped parsley
1/2 cup chopped green onions
1/2 cup chopped mint
pepper
2 large navel oranges, diced
Directions:
Put couscous, juice concentrate, lemon juice, olive oil, cinnamon and salt to taste in a large mixing bowl and stir.
Add boiling water, stir to mix and cover.
Allow to rest about 10 minutes, or until all water is absorbed.
Fluff with a fork.
Stir in greens and pepper to taste.
Add oranges and toss to mix.
Serve at room temperature.
