Ingredients:
2 eggs ( or 4 eggwhites)
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
125 g low-fat ricotta cheese
1 tomatoes, chopped
1 small onions, peeled and chopped
6 mushrooms, sliced
salt and pepper
Directions:
Mix together eggs, cheese, basil & oregano.
Add tomato, onion and mushrooms. Season to taste.
Spoon mixture into buttered baking dish.
Bake at 180 degrees celcius for 25 – 30 minutes.
