Ingredients:
1 cup canned pumpkin
1 cup brown sugar
2 egg substitute
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon cloves
3 cups oatmeal
1 cup raisins
Directions:
Mix and form into small balls. The cookies will expand slightly but they shouldn’t be too flat when they’re done.
Bake on greased cookie sheet at 350 for 10-20 minutes.
For the egg substitute, I’ve made it successfully using both Ener-G egg replacer and applesauce. I’m sure that there are other substitutes that would work as well.
