Ingredients:
1 cup flour
1/2 cup quick oats
1/2 cup packed brown sugar
1/2 cup butter
2 (15 ounce) cans pumpkin
2 (12 ounce) cans evaporated milk
4 eggs
1 1/2 cups sugar
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon cloves
1 teaspoon salt
1/2 cup packed brown sugar
1/2 cup chopped pecans
2 tablespoons butter, softened
Directions:
Mix first 4 ingredients until crumbly; press into greased 13×9 baking pan.
Bake at 350F for 20 minutes.
While the crust is baking: Beat all filling ingredients in lg bowl until smooth.
Pour into crust; bake for 45 minutes.
Topping: Mix the topping ingredients; sprinkle over filling and bake another 15 minutes until knife comes out clean.
