Ingredients:
2 tablespoons vegetable oil
1 cup chopped onions
1 cup chopped sweet red peppers
1 garlic cloves, finely chopped
1 (8 ounce) cans tomato sauce
1/3 cup apple juice
1 tablespoon brown sugar
1 tablespoon vinegar
1 teaspoon prepared yellow mustard
2 (1 lb) cans butter beans, rinsed and drained
1 1/2 teaspoons cornstarch
2 tablespoons water

Directions:
Preheat oven to 350 degrees.
Spray a 1-1/2 qt baking dish with a nonstick cooking spray.
Heat oil in a large nonstick skillet over medium heat.
Add onions, red pepper, and garlic.
Cook until onions are tender and start to brown, about 10 minutes.
Remove from heat.
Add remaining ingredients, dissolving cornstarch in the 2 Tbsp of water before adding.
Mix well.
Transfer to prepared baking dish.
Bake, uncovered, for 1 hour.
