Ingredients:
4 boneless pork chops, well trimmed
salt and pepper
4 -6 green onions, cut in 1 inch diagonal slices
8 ounces snow peas, strings removed
1 tablespoon fresh ginger, minced
3 garlic cloves, crushed and minced
1/4 cup creamy peanut butter
1 tablespoon sugar
1 tablespoon soy sauce ( I use Tamari)
1/8 teaspoon cayenne pepper
Directions:
Cook seasoned pork approx 4 minutes on each side in lightly greased saute pan.
Transfer pork to platter, keep warm.
In same skillet add green onions and snow peas, saute for 2 to 3 minutes. Stir in garlic and ginger, cook 1 minute.
Return pork to pan. Meanwhile mix remainder of ingredients in bowl with 3/4 cup water (or stock). Pour mixture in skillet, heat until boil.
Serve with steamed rice.
