Ingredients:
1/4 cup butter
3/4 cup onions, chopped
1 cup bell peppers, chopped
3 cups celery, chopped
1 minced garlic cloves
1 (28 ounce) cans diced tomatoes
3 tablespoons brown sugar
1 1/2 teaspoons salt
1/8 teaspoon pepper
2 bay leaves
2 tablespoons lemon juice
2 lbs medium shrimp or 2 lbs large shrimp, peeled and cooked
3 cups hot cooked rice
Directions:
Melt butter in large skillet over medium heat and saute onion, garlic, celery, and bell pepper until tender approximately 15 to 20 minutes.
Add tomatoes, brown sugar, salt, pepper, and bay leaves and simmer for an additional 15 to 20 minutes.
Add lemon juice and shrimp.
Cover and simmer for 6 to 8 minutes.
Serve over a bed of rice.
