Ingredients:
1 (15 ounce) cans mandarin oranges in light syrup
1 tablespoon olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1/4 teaspoon black pepper
3 cups chopped romaine lettuce
3 cups baby spinach
1 cup chopped red cabbage
Directions:
Drain mandarin oranges, reserving oranges in a large bowl and juice in a medium bowl.
To the mandarin juice, add olive oil, vinegar, dijon mustard and pepper. Whisk until blended.
In the large bowl, add lettuce, spinach and cabbage to the reserved oranges.
Pour dressing over all and toss well to combine.
Serve immediately.
