Ingredients:
1 pork heart
1 teaspoon salt
hot water, to cover
2 stalks celery, finely chopped
2 large onions, finely chopped
2 tablespoons vegetable oil
4 tablespoons brown sugar
1/4 cup apple cider vinegar
1/2 cup water
1/2 cup ketchup
Directions:
Put the heart in a pot.
Cover with hot water.
Add salt.
Bring to a boil.
Cook on medium heat until done, about 1 1/2 hours.
You may need to skim the water during cooking.
Drain.
Cut heart into slices.
Sauce: Saute onion and celery in oil until soft.
Combine sugar, vinegar, water, and ketchup.
Add to onion mixture.
Bring to a boil.
Reduce heat and simmer, covered, 45 minutes.
Add sliced heart.
Heat 10 minutes.
