Ingredients:
5 cups peeled and shredded zucchini
3/4 cup sugar
3/4 cup equivalant sugar substitute ( I use splenda)
2 teaspoons vanilla
1 1/4 cups flour
1 1/4 cups wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup baking cocoa
Directions:
Preheat oven to 325 degrees and Grease 9 X 13 pan.
Mix together first four ingredients.
Add remaining ingredients.
Spread in pan.
Bake for 40 – 50 min, or until knife inserted in center comes out clean.
