Ingredients:
6 egg whites
1 cup applesauce
1 1/2 cups sugar
1 tablespoon vanilla extract
2 cups shredded zucchini
2 1/2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/4 teaspoon baking powder
Directions:
Preheat oven to 350.
Combine and beat egg whites, applesauce, sugar and vanilla extract.
Stir in Zucchini.
Mix dry ingredients and add to wet mixture. Mix well.
Line muffin tin with muffin/cup cake papers.
Fill 2/3 the way up.
Bake for 19 minutes.
