Ingredients:
1 (15 ounce) cans cream of coconut ( preferably Coco Lopez or any sweetened brand)
3/4 cup water
1/2 cup fresh lime juice, strained to remove pulp ( approximately 5 limes)
5 limes, zest of
1/2 cup sweetened flaked coconut
Directions:
In a bowl, whisk together all ingredients.
Chill mixture several hours or overnight.
Before adding to the ice cream maker, shake mixture well.
Freeze mixture in an ice-cream maker.
Transfer sorbet to an airtight container and put in freezer to harden.
