Ingredients:
1 (10 ounce) packages frozen chopped spinach
2 eggs
3 egg whites
3/4 cup feta cheese
1 cup skim milk
8 ounces sliced mushrooms
1/4 cup onions, minced
salt & pepper ( to taste)
Directions:
Preheat oven to 325F.
Cook spinach according to package directions. Drain very well.
In bowl combine eggs, egg whites, feta cheese, milk, mushrooms, onions.
Season accordingly (the cheese is fairly salty on its own – I usually used 1/4 teaspoon salt & then go heavy with the pepper).
Spray 10″ quiche pan with cooking spray and pour in mixture.
Bake 35 minutes or until done.
