Ingredients:
2 tablespoons olive oil
1/2 cup finely diced prosciutto
1 cup sliced mushrooms
1 teaspoon minced garlic
1/4 cup chopped black olives
1/3 cup white wine
1/3 cup chicken broth
1 tablespoon chopped parsley
1 eggs
6 tablespoons grated parmesan cheese
1/2 lb cooked spaghetti
Directions:
Heat the oil in skillet.
Add prosciutto, mushroom, garlic and olives.
Saute till mushrooms are tender.
Add the wine and broth and bring to a boil.
Simmer over high heat until liquid is reduced by half.
Add parsley.
Break egg into mushroom mixture and stir till egg is cooked. Add cheese and mix well.
Add spaghetti and toss.
