Ingredients:
6 -8 spring onions, trimmed and finely chopped
2 tablespoons olive oil
350 g zucchini, sliced
1 tablespoon pine nuts, toasted
1 oranges, juice and finely grated rind of
2 tablespoons fresh dill
salt
pepper
Directions:
Fry onions in oil for 1 minute then add zucchini and stir-fry for 2 minutes Add all the remaining ingredients, and toss over a high heat until most of the juice is evaporated.
