Ingredients:
1 (19 ounce) cans white kidney beans, drained and rinsed
1 small onions, chopped
1 green peppers, chopped
1 tomatoes, chopped
1/2 cup chopped fresh parsley
1/4 cup extra virgin olive oil
2 tablespoons good quality white wine vinegar
1 tablespoon Dijon mustard
1 garlic cloves, minced
salt and pepper
Directions:
Combine the beans, vegetables and parsley.
Whisk dressing ingredients together and mix into salad. Add salt and pepper to taste.
Cover and refrigerate till ready to eat.
