Vegetarian Sweet Potato Stew

Ingredients:
2 tablespoons vegetable oil
1 small onions ( diced)
2 garlic cloves ( finely chopped)
1/2 yellow bell peppers ( seeded and chopped)
1/2 red bell peppers ( seeded and chopped)
1 1/2 cups water ( more for thinner stew)
1 (14 ounce) cans diced tomatoes
1 1/2 cups sweet potatoes ( diced and peeled)
1 (15 ounce) cans black beans ( rinsed and drained)
1/4 cup green chilies ( diced)
1/4 cup tomato sauce
1 tablespoon chili powder
1 tablespoon ground cumin
1/4 teaspoon lime juice

Directions:
Heat oil in large saucepan. Add onions and garlic, cook until lightly browned. Add bell peppers, cook for 5 minutes. Stir in water, tomatoes, sweet potatoes, beans, chiles, tomato sauce, chili powder and cumin.
Cook over medium heat for 20 to 25 minutes or until thickened and potatoes are cooked through. Season with salt and ground black pepper.
