Ingredients:
1/2 large onions, chopped
1/2 large green bell peppers, chopped
3 medium tomatoes, peeled,seeded and chopped
6 tablespoons molasses
4 tablespoons tomato paste
4 tablespoons Bourbon
3 tablespoons brown sugar
1 tablespoon Dijon mustard
1/2 teaspoon salt ( or to taste)
1/4 teaspoon black pepper
1 (14 ounce) cans black beans, rinsed and drained
1 (14 ounce) cans kidney beans, rinsed and drained
1 (14 ounce) cans great northern beans, rinsed and drained
Directions:
Preheat oven to 350 degrees F.
Saute onion and green pepper in a little butter or olive oil in a skillet until tender and slightly browned.
Stir in tomatoes, molasses, tomato paste, bourbon, brown sugar, mustard, salt and pepper.
Bring to a boil; then simmer, stirring constantly, for 5 minutes.
Stir in beans, then pour mixture into a shallow 8×8 inch baking dish.
Bake in a 350 degree F oven for 25 to 30 minutes or until hot and bubbly.
