Ingredients:
2 large sweet potatoes, grated
2 eggs, beaten
1/2 onions, finely chopped
1/2 cup all-purpose flour
1 teaspoon grated orange rind
1 teaspoon salt
1 dash black pepper
cooked ground pork (hash) (optional) or shredded pork (optional)
Directions:
Combine all ingredients, form patties, and fry.
May also incorporate some cooked ground or shredded meat.
For Vegetarian option, omit meat.
