Ingredients:
8 slices bacon, cooked and crumbled
1 (28 ounce) cans pork and beans, undrained
1 (15 1/2 ounce) cans chili beans, undrained
3/4 cup finely chopped onions
1/2 cup packed dark brown sugar
1 (8 ounce) cans mild red enchilada sauce
1 tablespoon flour
2 teaspoons chili powder
1 teaspoon ground cumin
1/8 teaspoon garlic powder
1 cup shredded monterey jack cheese
Directions:
Combine all ingredients except cheese, mix gently but thoroughly.
Place in a greased 2 quart casserole.
Bake uncovered at 475F for 15 minutes.
Reduce heat to 375F and bake for an additional 30 minutes, stirring occasionally.
Sprinkle with cheese, bake 15 minutes longer.
