Ingredients:
1 cup granulated sugar ( read *NOTE)
1 cup water
1 cup fresh lime juice ( about 8 limes total)
ice cubes
1 quart seltzer water ( or club soda)
lime slices, for garnish
Directions:
*NOTE: Whirl the sugar in a mini-chopper or blender until finely ground. Basically, you’ve just prepared “superfine” sugar at a fraction of the cost.
In a small saucepan over medium heat combine the sugar and water. Cook, stirring until sugar is dissolved and liquid is clear. This should take only 2-3 minutes.
Transfer liquid to a pitcher and allow to cool.
Once cooled, stir in lime juice. Stir well.
Fill a large pitcher with ice cubes, pour in the simple syrup and the seltzer water.
Stir well and serve!
