Ingredients:
1 lb lean ground beef, browned
1 onions, chopped
1 clove garlic, minced
1 (19 ounce) cans enchilada sauce ( I use Las Palmas Original)
1 can small ripe pitted olives
1 teaspoon salt
1 tablespoon chili powder
1 package cornbread mix ( Jiffy is a good one)
1 cup shredded cheddar cheese
Directions:
Combine all ingredients except cornbread and cheese.
Pour into a 2 quart casserole dish.
Preheat oven to 375 degrees.
Prepare cornbread according to mix and spread over meat mixture.
Sprinkle with cheese and bake 30 to 40 minutes until cornbread is done and meat is bubbly.
