Ingredients:
2 cups cooked rice
3/4 lb chicken breasts, sliced
8 ounces salsa
1 (11 ounce) cans Mexican-style corn, drained
1 (11 ounce) cans black beans, drained and rinsed
1/2 cup shredded monterey jack pepper cheese
Directions:
Spray skillet with cooking spray and heat.
Add chicken, cook on medium heat until no longer pink.
Stir in salsa, corn, beans, and rice.
Sprinkle with cheese.
Heat until cheese is melted.
