Rice Salad

Ingredients:
2 1/2 cups cooked rice
1 (15 ounce) cans black beans, drained and rinsed
1 (7 ounce) cans whole kernel corn, drained
1/2 cup red bell peppers, chopped
3 tablespoons olive oil
2 tablespoons lemon juice
1 1/2 teaspoons cilantro leaves
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder

Directions:
Mix rice, beans, corn and bell pepper in a large bowl.
Whisk olive oil, lemon juice, cilantro leaves, salt, chili powder and garlic powder in a small bowl until blended.
Add to rice mixture and toss.
Can be made a day in advance.

Servings: 4

Time preparation: 20 min.
