Ingredients:
1 tablespoon vegetable oil
1 (1 lb) beef sirloin steaks, cut into 1 inch cubes
1 onions, chopped
3 cloves garlic, minced
3 yellow squash, cut unto 1 inch chunks
1 (15 ounce) cans great northern beans, rinsed and drained
1 (14 1/2 ounce) cans diced tomatoes
1/4 teaspoon black pepper
2 cups loosely packed fresh spinach leaves
1 tablespoon grated parmesan cheese ( or more)
Directions:
In a large skillet, heat oil over high heat.
Add steak, onion, and garlic.
Saute 5 minutes, or until meat is browned, stirring frequently.
Add yellow squash and saute 3 to 4 minutes, stirring frequently.
Add beans, tomatoes, and black pepper, mix well.
Cook 3 to 4 minutes, or until heated through.
Just beore serving, stir in spinach and cook 2 to 3 minutes, or until spinach wilts.
Sprinkle with Paresan cheese and serve.
