Ingredients:
1 lb boneless chicken breasts, diced
2 teaspoons garlic, minced
1 1/2 teaspoons salt
1/2 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon thyme
4 tablespoons olive oil
1 tablespoon lemon juice
1/8 teaspoon cayenne
to taste fresh ground pepper
Directions:
Combine all ingredients in a non-reactive bowl (glass or stainless).
Cover and refrigerate overnight.
Place the chicken on skewers.
Grill until tender (about 3-4 minutes per side).
