Ingredients:
1/2 cup smooth peanut butter
1/4 cup hot water
1/3 cup coconut milk ( I use light)
1 tablespoon sesame oil
1/2 tablespoon fish sauce
1 teaspoon fresh ginger, minced fine
1 tablespoon light soy sauce
2 tablespoons fresh lime juice
1 tablespoon Asian chili sauce ( Sriracha is my favorite)
1 1/2 tablespoons dark brown sugar
1 -2 garlic cloves, minced
1 tablespoon cilantro, chopped fine
2 large scallions, sliced thin white and green parts
Directions:
Whisk peanut butter and hot water together in a medium bowl.
Stir in remaining ingredients and use as a dipping sauce or on noodles!
