Ingredients:
3 tablespoons olive oil
1/2 teaspoon sesame oil
1/2 tablespoon soy sauce
1 tablespoon teriyaki sauce
3 garlic cloves, minced
1 tablespoon fresh ginger, grated
2 tablespoons Thai red curry paste
1 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 small dried chilies, finely crumbled
1/4 teaspoon salt
1 teaspoon pepper
2 lbs chicken breasts, boneless & skinless, cut into bite-size cubes
1 sweet green peppers, seeded & cut into 1 ” squares
Directions:
In a large bowl, mix all ingredients listed under marinade.
Marinate chicken, covered, overnight in the refrigerator.
Preheat oven to 450 F.
Line a baking sheet with aluminum foil.
Remove chicken from marinade, discarding liquid, and cook on baking sheet for 4-6 minutes.
Skewer chicken with green pepper on toothpicks.
