Ingredients:
6 boneless skinless chicken breasts
1 1/2 cups long grain white rice ( I use Jasmine)
4 garlic cloves
1 cup fat free chicken broth
1 cup orange juice
2 teaspoons ground ginger
2 tablespoons ketchup
2 tablespoons honey
2 tablespoons rice vinegar
1 tablespoon light soy sauce
1 (20 ounce) cans canned pineapple chunks, drained and reserved 1 cup ( about 2 1/2 cups)
scallions ( to garnish)
Directions:
In a deep skillet or pan, sprayed with vegetable spray, brown the breasts 3 minutes each side.
Set aside on a plate.
Add rice and garlic to the pan and cook till rice is translucent.
Place the chicken over the rice and add the remainder of the ingredients, including juice.
Bring this to a boil and then turn to low.
Simmer, covered till the rice is cooked about 20-30 minutes.
Sprinkle with scallions and serve.
