Ingredients:
1 cup flour
1/4 cup confectioners’ sugar
1/2 cup melted butter
1 cup sugar
1/2 teaspoon baking powder
2 slightly beaten eggs
2 tablespoons lemon juice
2 teaspoons grated lemons, rind of (optional)
1/2 cup flaked coconut (optional)
Directions:
Mix 1st three.
Press into an 8″ square pan.
Bake at 350 for 20 minutes.
Meanwhile, mix all the rest.
Pour over hot crust.
Bake 25 more minutes.
Chill.
Sprinkle with confex sugar when cold.
