Ingredients:
1 teaspoon paprika
1 teaspoon curry powder
1/2 teaspoon salt
1 1/2 lbs boneless skinless chicken breasts, cut in 1 inch pieces
1 tablespoon olive oil
1 large onions, thinly sliced
3 cloves garlic, minced
1 cup chicken broth
3 firm tomatoes, chopped
1/2 cup green olives, halved
1/2 cup ripe olives, halved
Directions:
Mix paprika, curry powder and salt.
Sprinkle over chicken.
Heat 12 inch skillet, add chicken and brown all sides.
Remove chicken; add oil to skillet.
Add onion and garlic; saute 1 minute.
Add broth, tomatoes, olives and chicken.
Bring to a boil; reduce heat and simmer 6 minutes.
