Ingredients:
3 tablespoons butter
1 1/2 cups chopped celery
1 cup chopped carrots
1/2 cup chopped onions
4 cups water
2 chicken bouillon cubes
1 1/2 cups instant mashed potatoes
2 cups milk
2 cups shredded medium cheddar
Directions:
In large pan melt butter, add celery, carrots, and onion.
Cook on medium heat 10 minutes.
Add water and bouillon.
Bring to a boil.
Cover and simmer 20 minutes.
Stir in instant potato.
Slowly add milk and cheese, stirring constantly until cheese is melted.
