Ingredients:
1 cup black-eyed peas, rinsed and drained
1 onions, chopped
1 jalapenos, seeded and minced
2 garlic cloves, minced
1/2 teaspoon cumin
1 teaspoon thyme
1 bay leaves
1 cup long-grain rice
1 cup vegetable broth
1/2 cup tomatoes, crushed
1/2 cup allspice
1/2 teaspoon salt
Directions:
Soak peas.
COmbine peas with onion, jalapeno, garlic, cumin, thyme, bay leaf and 2 cups water.
Boil.
Reduce and simmer.
Add rice, broth, tomato, allspice and salt.
