Ingredients:
1 lb zucchini, sliced 1/4 inch
1 lb potatoes, sliced 1/8 inch
1 lb eggplants, sliced 1/4 inch
1 red peppers or 1 green peppers, sliced
1 thinly sliced onions
2 thinly sliced green onions
2 lbs ripe peeled tomatoes, chopped
1 bunch diced parsley
6 -8 minced garlic cloves
salt
pepper
1/4 cup olive oil
Directions:
Preheat oven to 350.
In a casserole dish layer half of the ingredients in order except for the oil, seasoning with salt and pepper as you layer repeat with remaining half of the ingredients.
Top with oil and bake uncovered for about 1 1/2 hour.
The top will be crisp and the inside soft and melt in your mouth!
