Ingredients:
2 lbs carrots, peeled
1 tablespoon honey
1/4 teaspoon salt
2 teaspoons unsalted butter
Directions:
Place carrots, cut lengthwise, quartered into 3-inch pieces, in a saucepan, barely covered with water.
Add honey and salt and bring to a boil.
Reduce heat; simmer, uncovered, until carrots are tender.
Increase heat and boil off excess water. Remove pan from heat and let cool slightly.
Stir in butter.
