Ingredients:
1 cup rice, uncooked ( not instant)
1/2 cup onions, chopped
1/2 cup red peppers, chopped
1/2 cup butter, melted
16 ounces chicken broth ( canned is okay)
3/4 cup beer
1/4 teaspoon thyme
Directions:
Saute onion and pepper in butter until tender.
Add chicken broth, rice, beer, thyme and salt and pepper to taste.
Bring to a boil, cover and reduce heat.
Simmer for 30- 40 minutes until liquid is absorbed and rice is done.
