Ingredients:
2 mackerel ( about 2 lb each)
1 large onions, finely chopped
1 carrots, diced fine
1/2 green peppers, chopped
1 bay leaves
3/4 cup vinegar
1/2 teaspoon salt
1 tablespoon chopped fresh parsley
1/4 teaspoon fresh thyme, minced

Directions:
Preheat oven to 400 degrees.
In a saucepan over low heat combine all ingredients except for the fish.
Cook over low heat for about 20 minutes.
Remove the bay leaf.
Place fish in a baking dish and pour the sauce over the fish.
Bake for 30-40 minutes.

Servings: 4

Time preparation: 15 min.

Time total: 75 min.
