Ingredients:
cooking spray
4 chicken breasts
1/4 cup lemon juice
1 teaspoon lemon rind, finely grated
1 teaspoon chicken stock powder
1/2 cup brown sugar, loosely packed
2 tablespoons honey
1/4 teaspoon soy sauce
2 teaspoons cornflour
1/4 cup water
Directions:
Coat a large non stick frypan with cooking spray.
Fry the chicken until cooked through.
Remove from the pan and leave to one side.
Place all other ingredients into pan except the water and cornflour.
Stir ingredients well until boiling.
Combine cornflour with water and add to pan.
Bring back to the boil stirring constantly.
Cut chicken into large slices then return to the pan and re-heat, coating with sauce.
