West Bend Electric Skillet Scalloped Potatoes

Ingredients:
4 cups peeled and sliced potatoes
1/2 cup minced onions
1 teaspoon salt
1 3/4 cups milk
1/2 cup cheddar cheese
pepper
1/4 cup crushed crackers or 1/4 cup breadcrumbs
1 teaspoon parsley

Directions:
Combine potatoes with onion, salt and milk, simmer, covered, for 45 minutes, or until tender.
Sprinkle cheese, pepper and crumbs over top. Continue cooking, uncovered, for 20 minutes. Reduce to “warm” for serving. Makes 6 to 8 servings.
