Ingredients:
2 cups cooked rice
2 (6 ounce) cans tuna, drained
2 eggs, hard boiled and chopped
1 cup grated carrots
6 -10 green onions, sliced
1/4 cup chopped sweet pickles
1/4 teaspoon pepper
3/4 cup mayonnaise ( I use Miracle Whip Light)
1/4 cup vinegar
2 tablespoons vegetable oil
2 tablespoons olive oil
Directions:
Chill cooked rice.
Combine with remaining ingredients, pour over rice, and mix well.
Chill for at least 2 hours.
Servings: 4-6
