Ingredients:
1 English cucumbers, unpeeled & cubed ( 1/2 “inch” cubes)
2 medium tomatoes, cubed
1 green sweet peppers, cubed
1 medium red onions, chopped finely
1/2 cup parsley, chopped
2 cups feta cheese, save some to garnish the salads
1 cup black olives, pitted & sliced
1 package sunrise soft tofu
1/4 cup red wine vinegar
1/3 cup olive oil
2 cloves garlic
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon sugar
salt & pepper

Directions:
In a food processor blend all the dressing ingredients until smooth.
Mix all the veggies together in a bowl and some of the feta cheese.
Toss the veggies with the dressing.
Garnish with the remaining feta.
Chill and serve.
