Ingredients:
2 onions, finely diced
2 cloves garlic, crushed
1 inch fresh ginger, peeled and grated
1/3 cup butter
2 lbs potatoes, peeled and diced
1 tablespoon curry powder ( I used Hot)
1 cup chicken stock
1/2 lb frozen peas, thawed
1 bunch coriander, finely chopped
1 tablespoon white wine vinegar
1 tablespoon fresh lemon juice
salt
freshly ground black pepper
Directions:
Saute onions,ginger and garlic in melted butter til soft.
Add potatoes.
Sprinkle over curry powder,toss well.
Stir in stock,bring to boil.
Reduce heat,cover and simmer for 15 minutes.
Add peas,cook 5 minutes.
Add coriander,wine vinegar and lemon juice.
Season to taste with salt and pepper.
Heat through.
I serve this with Basmati rice,sliced banaas tossed in plain yogurt and chutney.
