Simple, Low-fat White Bean Salad

Ingredients:
1 (15 ounce) cans cannellini beans, rinsed and drained
1 stalk celery, thinly sliced
1/2 roasted red peppers
1/2 roasted yellow peppers ( can use 1 whole red if yellow aren’t on hand)
2 tablespoons red wine vinegar
1 tablespoon olive oil
1/2 lemons, zest of
salt
fresh ground black pepper, to taste
crushed red pepper flakes (optional)
1/2 cup fresh basil leaves, chopped into ribbons

Directions:
Toss all ingredients except basil in bowl.
Adjust salt and pepper to taste.
Refrigerate until ready to serve.
Toss in fresh basil right before serving.
