Ingredients:
1 stalk celery, sliced thin
1 bunch broccoli florets, chopped coarsely
1 medium onions, finely chopped
1 small parsnips, peeled and sliced
1 large russet potatoes, peeled and sliced
4 cups fat-free vegetable broth or 4 cups chicken broth
salt and pepper
Directions:
Bring all ingredients to a boil in a large saucepan.
Reduce heat and simmer 15- 20 minutes, until veggies are tender.
Let cool for 10 minutes.
Puree in blender until very smooth.
