Red Onion Confit

Ingredients:
1 large red onions
2 tablespoons olive oil
2 tablespoons red wine vinegar
3 tablespoons marsala wine

Directions:
Slice the onion very thin and evenly.
A mandolin is perfect for this.
Sweat the onions in olive oil on LOW till very soft.
Add the red wine vinegar and Marsala.
Simmer till all the liquid has reduced.

Time total: 35 min.
