Ingredients:
2 (15 ounce) cans kidney beans, rinsed and drained
1 red bell peppers, chopped
3 scallions, chopped
1 celery ribs, chopped
1/4 cup parsley, chopped
1 cup sweet red pepper relish
2 tablespoons olive oil
1 tablespoon white vinegar
coarse salt
black pepper

Directions:
Combine all ingredients in a medium bowl; adjust seasoning with salt and pepper.

Servings: 6-8
