Ingredients:
2 slices bacon, cut into 1/2 inch pieces
3/4 lb boneless pork chops ( sliced into 1/4 inch strips)
1 onions, chopped
1 clove garlic, minced
1 teaspoon dried thyme
1 (14 ounce) cans stewed tomatoes or 1 (14 ounce) cans diced tomatoes
1/2 cup white wine or 1/2 cup apple cider or 1/2 cup stock or 1/2 cup water
1 (15 ounce) cans pinto beans ( rinsed & drained)
salt and pepper

Directions:
In a large skillet cook bacon over med.
heat until almost crisp.
Stir in meat, onion, garlic and thyme.
S& P to taste.
Cook 4 minutes.
Add liquid and tomatoes and bring to boil.
Cook uncovered for 10 minutes or until thickened.
Add beans during the last 5 minutes or until heated through.

Servings: 4

Time preparation: 10 min.

Time total: 30 min.
