Ingredients:
1/3 lb pork sausage ( more if desired, Vegetarians may omit the sausage and add another can of beans) (optional)
1 large yellow onions, diced
1 large green bell peppers, diced
1 (15 ounce) cans chili beans
1 (15 ounce) cans diced tomatoes
2 (8 ounce) cans tomato sauce
2 2/3-3 1/2 cups water
1 tablespoon garlic powder
1 1/2 teaspoons salt
2 teaspoons cumin
1 tablespoon chili powder
1 teaspoon sugar
Directions:
Brown and”crumble” sausage.
Add diced onion& pepper.
Saute until onions are almost clear.
Add tomatoes, beans, tomato sauce, seasonings and water.
Bring to a boil, then reduce heat to simmer.
Cover and simmer for about 20 minutes.
Total preparation time is about 30 minutes, because of dicing the vegetables and browning meat.
Makes about 2 quarts.
Will feed 4 easily with seconds.
Cornbread goes well with this soup.
