Ingredients:
6 -8 large potatoes, boiled and mashed
1 cup sour cream
2 teaspoons salt
1/4 teaspoon black pepper
2 tablespoons chopped chives or 2 tablespoons green onion tops
1 (4 ounce) jars pimentos
1/4 cup butter or 1/4 cup margarine
1 (10 ounce) packages chopped spinach, thawed and drained
1 cup shredded cheddar cheese

Directions:
Combine all ingredients except cheese in large bowl.
Spoon into greased 2 quart casserole.
Bake uncovered at 400 degrees for 15 minutes.
Top with cheese and bake 5 more minutes.
